A systematic approach on analysis the processes of water- heat and enzymatic treatment of the grains is in the article. There are three main system units: "Medium", "Energy" and "Equipment". There found an interrelation between the units and the first unit “Medium” has been checked in details. The general physical and thermo-physical parameters, that define condition of the medium and their changes in time, have been discovered. The parameters as density and µ (dynamic viscosity) of the water-grain suspensions, which vary during the process, also depend on temperature and concentration of enzymes.
