The article describes the experimental setup flow apparatus has a purifying device, which move on the heat exchange surface. Installation is intended for investigation of thermal processes on the side of the processable environment in continuous devices to the surface. The authors give the description of the experimental setup, methodology of research and views of mathematical dependencies to obtain calculation formulae in criteria-based form description of the specific features of the processing food products with non-Newtonian pseudoplastic properties in continuous devices to the surface. There is a significant power consumption when processing viscous products. Provides a list of the devices included in the experimental setup.
