The correlarion between natural decrease of the mass of fruit and berries during cold storage and free moisture content in its plant tissue is shown in this work. The direct linear correlation between water activity and share of free moisture in fruit and berries is received. The received results allow to improve storage modes along with the decreasing of loss by projection the ability of vegetable raw materials to the long cold storage. According to the results of diagnostics fruit and berries, which is capable of being stored with minimal loss, is put on storage.
