At the present time similarity theory approach is commonly used to calculate mass transfer during drying food materials. The paper produces a system of compatible differential equations of heat and mass transfer, its analysis making it possible to reveal both determinate and determinant criteria. Experimental data were used to obtain numerical parameters of the exponential criterion that may adequately describe the process of surface radiation-convection drying of dried apricots.
