The article deals with the quality and environmentally sustainability of low-temperature methods of processing and storage of plant products. The methodology of assessing the quality of food and biological value of the product, as well as environmentally sustainability of production is analyzed. The need to implement the environmental tool such as MIPS - analysis is revealed. The issue of universal method deriving that allows to assess the impact on the environment in all as-pects and to determine the level of quality and product environmentally sustainability accurately.
