Features of salmon fish species breeding in aquaculture provokes some problems of fish raw material quality. Main of the problems are connected with chemical composition of fish tissues and freshness characteristics. In the following article analysis of chemical composition of salmon fish species such as trout Oncorhynсhus Mykiss, salmon Salmo Salar, trout Salmo trutta morpha farso raised in aquaculture is given. Freshness characteristics of chilled fish raw materi-al and the duration of preliminary cold storage before processing were determined
