Natural decrease of the mass of fruit and berries during cold storage means a lot of financial decrease. The prediction of the amount of plant natural decrease during its cold storage is a very good method to minimize financial losses. According to this method only products with good characteristics are stored. Other plant products are sold. In this case we have deal with enormous quantities of products. Because of this the accuracy of these methods is very important. In this work the index of water activity in plant products is used with the purpose of prediction. Water activity is calculated through the crioscopic temperature and measured by the analisator. The comparison of the results, which were got with the help of different methods lets us make a conclusion about the accuracy of the results which are used for the prediction of cold storage.
