Depending on the original herbal raw material, which sugar was obtained of, the impurities which are insoluble in the water-alcohol solutions may be contained in its composition. In the article it is investigated the dependence of the colloidal structures of different kinds of sugars formation upon the alcohol concentration in the solution. The aim of the matter is to find a general mathematical model that will describe the formation colloidal impurities in the water-alcohol solution of sugars process. The graphs of the model, visually describing the process are presented.
