On the effect of potato membrane (peel) on mass-transfer when it is heated by electromagnetic energy of SHF field

To solve a problem of inner mass-transfer when potato is heated by electromagnetic energy of SHF field the kinetics of moisture removal was experimentally obtained. It characterized the influence of membrane (peel) on the process period and potato mass loss. The photos show distribution of moisture under gravity.
