Nowadays, as before, thermodynamic and mass transfer processes in capillaryporous media need to be specified. The paper presents thermal gravimetric curves for evaporation of moisture from dried apricots being dried, the curves being analyzed, and an approximation dependence of moisture removal potential on moisture content being obtained.
