Fast defrosting at best save initial state structure of tissues. Therefore, defrostacii has become one of the most important indicators of effectiveness of the process itself. Split block for carcases by means of electric shock (Patent No. 1701235 dated 01.09.91, way of defrosting fish sticks and a device for its realization. Authors V.T. Antufyev and S.А. Gromtsev) happens instantly, and thawing product (carcasses) in water-in 12-14 times faster. The dnfrostacii can be fought solely with energy from tap water. Cost of electricity to electric shock is not more than 1-2%of the cost of complete thawing of fish according to technology in the processing of the product until ready. Low cost of installation makes it available for small businesses.
