In order to preserve safety of the dairy products processed in ecologically challenged areas, various detoxification methods are used. They have different effects on the multicomponent structure of milk. Studying of the ways detoxification methods affect milk provides an opportunity to trace change dynamics of its technological properties, as well as ensure consumer safety.
