Liposomal technology is readily applied in medicine, cosmetology and pharmacology. The experience of encapsulation of bioactive substances can be useful in food technology. In the study liposomes were prepared from soybean lecithin by two completely different methods. The structure of liposomes and particle size were analyzed and compared.
