The article provides data on optimizing the way dietary fibers production from secondary raw materials for sugar production. The aim of the study was to optimization of modes of processing of secondary raw materials - sugar beet beet chips for production of food fibres with a maximum bind water and sorption capacity. Optimization made on the basis of mathematical models obtained by means of full factorial experiment.
