Flavonoids (polyoxyphenols) are interesting by its therapeutic and antioxidant properties, are widespread in plant and some animal products and can serve as analytical “beacons” during the estimation of the state of biological objects. The results of this work and information about the electrochemical, luminescent and analytical properties of flavonoids is necessary for identification and certification of food products. The present investigation will make it possible to establish the standard procedures of analysis and to increase the sensitivity of the determination of native and contaminant substances
