A method of producing functional food additive from fish bones has been proposed. An experimental plant for vacuum drying of raw material and experimental procedure are developed. Data on kinetics of drying cod and pike-perch fish bones are obtained depending on various parameters of the process. During vacuum drying factors having effect are temperature of heating plates and pressure inside the apparatus. By the method of experiment planning a correlation of the factors and the rate of fish bone dehydration is derived as a second-order polynome.
