Uneven heating leads to a partial product overcooking that decreases quality indicators, increases energy expense, and as a result increases prime cost of the product. In this regard studies of uniformity of a vertical autoclave temperature field were conducted. The experimental autoclave of vertical type consisting of autoclave, steam generator with the pipeline and nozzles, circulating pump with the pipeline, manometers, sensors, valves and the control unit was made. The results of the experiments proved that autoclave temperature field was more uniform, and time for achieving a uniform temperature field at switched-on pump was less than time for achieving a uniform temperature field of the autoclave at the switched-off pump for 3 minutes. Hence, application of described method provides more uniform temperature field of the autoclave that allows to exclude product overcooking and to increase quality of end product. It also reduces sterilization process time, namely the heat-up time by 4,9%.
