The article considers the process of slashing cut fruit to special spherical shape by shaping forms the cutting edge of the blade tool, described apparatus designed for chopping fruits and vegetables with the help of the slash cut of knife body and developed design blade body. The physical-mechanical and structural properties of foods, influencing the course of the grinding process, the physical model is considered as the fruit of lemon elastic body. The optimal shape of the cutting blade, allows to reduce the cutting forces arising. Describes the experimental part of the work. Presents the simulation of cutting fruits on the basis of experimental data, allowing determining the effect of design and process parameters on the characteristics of the grinding process and identifying the most important of them.
