The main regularities of the kinetics of the convective-radiative drying apricots
The results of experimental studies in the process of drying fruit mass transfer dried apricots. In particular, the dependence of entrainment of moisture from the surface of the dried apricots in free convection and different coolant temperature, as well as the dependence of entrainment of free moisture on the surface of a single
fruit apricots, depending on the time of the process at different temperatures and coolant capacity of IR irradiation. In addition, the diagrams of the dependence of the velocity and temperature mass transfer curves for the fruit dried apricots. As a result, we obtain the classical curve of the kinetics of dehydration.
