The study covers influence of composition and behavior of edible protective covers on meat and meat products sanitary-indicative microflora reproduction during the refrigerated storage. Kinetic curves of meat and meat products microflora growth during the aerobic and microanaerobic chilled storage shown. Intensity of working hurdles and mostly effective compositions estimated.
