Engineering of technique of product resistance calculation, which is derived with transglutaminase with different temperatures of addition application
Transglutaminase is used as a basic component in restructured semi-finished products production. Glued product resistance indicators are changing according to the temperature and time of fermentation. Quick exactly time value reception which is necessary for maximum patch level achievement will allow to facilitate and intensify manufacturing process.
