Research results of fish drying process (roach and alosa)

Experimental unit for drying of material and experiments carrying out method have been exhausted. Data for kinetics of roach and alosa fish drying depending on different process parameters have been obtained. During the process of drying the influence factors are: the temperature and moisture content of air  inside the unit. By means of planning experiment there were obtained their interconnection with the dehydration rate of  fish  in the mode of the second order polynomial.
